We had two different types of pasta left over. I tossed them together with some olive oil, balsamic vinegar, fresh basil & pepper, grape tomatoes and some chicken breast. If you want meat-free, this is also super yummy with chunks of fresh mozzarella cheese.
I was going to make these for Girl’s Night but my vegetarian friend backed out of coming and I had enough food so we had them another night.
I made a double batch of this recipe sans jalapeños and honey dipping sauce. I’m not a fan of sweet sauces. The sauce was good without the honey. However, even a double batch did not make 45 potstickers like the recipe says.
Day One we boiled them and served them with soba. They were ok. A little bland, but alright.
Day Two I fried the leftovers and they were MUCH better. I’m sure not quite as good for me, but way better. Those I would make again.

My local Whole Foods had Campo de Montalban on sale. It’s a perfect blend. Very flavorful. If you can pick some up, do so.
Their smoked gouda, however, was bland. A big disappointment. Smoked gouda is one of my favorite things.

Also made a Green Smoothie of Broccoli, OJ, Grapes & Blueberries
Every month we try to have a night just for us girls. Make the guys watch the kids (who are usually in bed by that point) and go have some grownup time. Last month it was my turn to host.
I went with a “Spa Food” theme.

Sesame-Crusted Tofu Salad with Citrus Vinaigrette
This was SO good. I’ll be making this dressing again. And the tofu had a really nice flavor.

Herb-Infused Spa Water
Really added a kick to plain ole water. It was quite herbal and I might try going with half the amount of herbs next time.
Lemon and Blueberry Tarts:
Take phyllo cups, fill with Lemon Curd, top with a Blueberry.

And it might be spa-worthy but we had a good amount of Mexican Martinis. Not as good as Trudy’s but we used:
2 oz Tequila
1 oz each Triple Sec & OJ
1/2 Lime Squeezed
Splash of Olive Juice
Fill remainder with sweet and sour.
Shake with ice.
Salt the rim, Garnish with olives.
And of course chocolate and guacamole, because who doesn’t like that?
Much fun was had by all. It was a good night together before a few participants moved away. I hope it’s an event I can continue in my new location.
Slice up your apples. I like the skins on but you can peel them if you don’t like it.

You need about 5 cups of apples. 2 lbs, give or take. Mix with a couple of splashes of lemon juice.

In a seperate bowl mix 1/4th cup each brown sugar and flour.

Lay out your puff pastry sheet.

Brush your puff pastry with the egg white. Give the yoke and the shell to the dog.

Place the apples on top of the puff pastry. Leave enough room around the edges for the pastery to puff up and make a crust around the apples. If you’re a fatty you can dot some butter on top.

While that’s baking mix 1/4tsp each almond extract and vanilla, 3 tablespoons orange juice and 1/3cup sugar until it’s smooth. Sugar like mine doesn’t disolve as easily as white sugar so I add a tablespoon of hot water too.

I crumbled up some cranberry stilton (which was hard because it was so creamy) and sprinkled it over the top. Then drizzle your sugar mixture over the whole thing and bake for 10 more minutes.

A menu of cheese? This place must be heaven on earth!

I’m never going to poop again.

They’re sooo good. I’ve never liked blue cheese but these stiltons are like a dessert by themself. And the smoked guda is amazing. It melts in your mouth.
A big selling point for me: They use a vegetarian rennet.
Youngest very much enjoyed her grilled cheese sammich.
